Ingredients:

  • 1 cup unsalted butter
  • 1 cup powdered sugar (sifted)
  • 2 large egg yolks
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 vanilla bean (or 1 tsp vanilla extract)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 1/2 cups all-purpose flour (spooned and leveled)
  • 1 cup almond flour (spooned and leveled)
  • 1/2 cup strawberry jam (or apricot)
  • Powdered sugar (optional, for decoration)

Instructions:

  1. Preheat the oven to 350°F.
  2. In a large bowl, cream the butter and powdered sugar until light and fluffy.
  3. Add the egg yolks, salt, cinnamon, vanilla, and lemon juice. Mix until well combined.
  4. Add the all-purpose flour and almond flour to the mixture and mix until just combined.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  6. Roll out the dough on a lightly floured surface to 1/4-inch thickness.
  7. Cut out cookies using a 2-inch cookie cutter. Cut out the centers of half of the cookies with a smaller cookie cutter.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Remove from the oven and let cool completely.
  11. Spread a small amount of jam on the bottom of each whole cookie.
  12. Place a cut-out cookie on top of each whole cookie.
  13. Dust with powdered sugar (optional).

This recipe yields 32 cookies and takes approximately 2 hours and 27 minutes to prepare .
