U.S. Officials Say Iran’s New Supreme Leader Gravely Wounded Amid Escalating Conflict

Here’s a delightful Antipasto Salad recipe that’s bursting with Italian flavors. It’s a medley of sliced meats, cheeses, olives, and bright cherry tomatoes, all tossed in a light lemon olive oil dressing. Perfect for any occasion!

Ingredients:

  • 3 cups chopped romaine lettuce
  • 1/2 cup green olives (halved)
  • 1/2 cup medium black olives
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cup mini pepperoni
  • 1/4 cup jarred roasted red peppers (chopped)
  • 8 ounces Genoa Salami (cut into bite-sized pieces)
  • 1/2 cup mozzarella cheese balls
  • 13 ounces artichoke hearts (quartered)
  • 8 ounces provolone cheese (cut into bite-size pieces)

Lemon Olive Oil Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning

Instructions:

  1. In a large bowl, combine the romaine lettuce, olives, tomatoes, pepperoni, red peppers, salami, mozzarella, artichoke hearts, and provolone.
  2. To make the lemon olive oil dressing, whisk together the olive oil, lemon juice, and Italian seasoning in a small bowl.
  3. Pour the dressing over the salad ingredients and toss gently to coat.
