Ingredients:

  • 1 ¼ pounds boneless, skinless chicken breasts (diced into 1-inch cubes)
  • 1 tablespoon olive oil
  • ¼ cup low-sodium soy sauce
  • ¼ cup water
  • 2 tablespoons honey
  • 1 ½ tablespoons light brown sugar (packed)
  • 1 tablespoon rice vinegar
  • ¼ teaspoon toasted sesame oil
  • 2 teaspoons fresh ginger (peeled and minced)
  • 2 teaspoons fresh garlic (peeled and minced, 2 cloves)
  • 2 teaspoons cornstarch
  • Optional garnishes: sesame seeds and chopped green onions

Instructions:

  1. Heat oil in a large non-stick skillet or wok.
  2. Add chicken and let it cook, giving space between pieces, until slightly browned on the bottom.
  3. Flip chicken pieces over and cook through.
  4. While the chicken is cooking, whisk together the teriyaki sauce mixture (soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch).
  5. Pour the sauce into the skillet once the chicken is just nearly finished cooking through.
  6. Let the sauce cook and simmer until thickened.
  7. Serve the Teriyaki Chicken warm over brown or white rice with steamed veggies.
  8. Optionally, garnish with sesame seeds and chopped green onions.
