Here's a delicious and vibrant Big Italian Salad recipe that’s perfect as a side dish or even a light main course. It’s packed with fresh veggies, briny olives, creamy cheese, and a zesty homemade dressing.

Ingredients

For the Dressing:

  • 1 cup fresh Italian parsley leaves
  • 1 cup fresh basil leaves
  • ¼ tsp dried oregano
  • 2 garlic cloves
  • ⅓ cup red wine vinegar
  • ¾ cup extra virgin olive oil
  • ¾ tsp salt
  • ¼ tsp ground black pepper
  • 2 tsp honey

For the Salad:

  • 1 large head romaine lettuce (or 3 hearts), chopped
  • 1 large red bell pepper, chopped
  • 1 cup hothouse cucumbers, seeded and chopped
  • 1–2 carrots, peeled into ribbons
  • Handful of grape tomatoes, halved
  • Handful of pitted olives
  • Ricotta salata or feta cheese, crumbled to taste

 Instructions

  1. Make the Dressing
    In a food processor, combine parsley, basil, oregano, garlic, vinegar, olive oil, salt, pepper, and honey. Blend until smooth and vibrant green.

  2. Assemble the Salad
    In a large bowl, combine all salad ingredients except the cheese.

  3. Dress and Toss
    Add about half the dressing and toss well. Add more dressing as needed to generously coat the greens.

  4. Finish with Cheese
    Toss in the crumbled cheese. Taste and adjust seasoning with salt and pepper if needed.
