Chicken Fajitas

 


Make these easy chicken fajitas with tender chicken and sautĂ©ed veggies—topped with all your favorite fixings for a fun and flavorful meal.

Ingredients

For the chicken:

  • 1¾ lbs chicken tenderloins (or boneless, skinless breasts pounded to ½-inch thickness)
  • ¼ cup vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp lime zest
  • 1 tsp cumin
  • ¾ tsp oregano
  • ¾ tsp ancho chile powder
  • ½ tsp smoked paprika
  • 1¼ tsp salt
  • 12 small soft flour tortillas

For the peppers:

  • 2 tbsp vegetable oil
  • 1 large red onion, sliced
  • 2 bell peppers, sliced
  • ½ tsp sugar
  • ¼ tsp salt

Optional toppings: sour cream, shredded cheese, guacamole, salsa, chopped cilantro

Instructions

  1. Prep chicken – If using breasts, pound to even thickness.
  2. Marinate – In a large zip-top bag, combine oil, garlic, lime zest, cumin, oregano, ancho chile powder, smoked paprika, and salt. Add chicken, seal, and massage to coat. Refrigerate 8–24 hours.
  3. Cook peppers – Heat oil in a large skillet over medium-high. Add onion, peppers, salt, and sugar. Cook until browned (8–10 min), deglazing twice with ¼ cup water each time. Set aside.
  4. Grill chicken – Preheat grill to high, oil grates, and cook chicken 2–3 min per side. Rest briefly, then slice into ½-inch strips.
  5. Serve – Arrange chicken and peppers on a platter. Warm tortillas in the microwave under a damp paper towel. Serve with toppings.
