Easy, Crispy Chicken Schnitzel


Here’s a delicious and easy recipe for Crispy Chicken Schnitzel that you can whip up for a satisfying family dinner

Ingredients:

  • 4 chicken breasts, boneless and skinless
  • 1/4 cup all-purpose flour
  • 2 eggs
  • 2 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 2 cups panko bread crumbs
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 cup avocado oil
  • Flaked salt and lemon wedges, for serving

Directions:

  • Dust chicken breast lightly with flour.
  • In a medium size mixing bowl whisk together eggs, Dijon, salt and pepper.
  • In a separate large mixing bowl stir together bread crumbs, paprika, garlic powder, salt and pepper.
  • Dip floured chicken breast into the egg mixture followed by the bread crumb mixture, shaking off any excess breading. Transfer to a sheet pan and refrigerate until ready to fry. This step can be done up to 24 hours in advance.
  • Add avocado oil to a skillet over medium heat. Once the oil is heated, pan fry the chicken on each side until golden and cooked throughout, about 2 to 4 minutes on each side.
  • Transfer to a serving plate. Garnish with flaked salt and lemon wedges, serve alongside mashed potatoes.
